Super Simple Corned Beef and Cabbage Dinner

  • 4# Corned Beef Brisketcorned-beef_sm
  • 8 small red potatoes (skin-on)
  • 3 large carrots, cut into 3″ pieces (optional)
  • 2 medium onions, quartered
  • 2 cloves garlic, coarsely crushed
  • 1 head green cabbage, cut into wedges

Place the brisket in a crock pot or heavy stovetop roasting pot, cover with water (some people like to use beer instead), and simmer on medium heat for4 to 5 hours.  Add potatoes, onions, garlic, and carrots, and return to a simmer for 30 minutes (you may need to add more hot water to cover the veggies).  Add cabbage wedges and return to a simmer for another 30 minutes.  Enjoy!
