Roasted Prime Rib

Beef Prime Rib Roasts are not only delicious, they are also remarkably simple to prepare, below is our favorite roasting method.
· Remove your roast from the refrigerator about an hour before cooking begins.
· Position a rack in the lower third of the oven and preheat oven to 450 degrees
· Place seasoned roast, rib side down, in a roasting pan and sear for 30-45 minutes or until golden brown (this process of searing will insure that your roast stays juicy)
· Reduce oven temperature to 285 degrees and continue roasting until the internal temperature of the roast reaches 125 degrees for rare, 130 degrees for medium rare, or 135 degrees for medium (the temperature will continue to rise around 5 degrees after the roast is removed from the oven). This will take about 12-15 minutes per pound depending on desired doneness. Ovens vary, so please rely on your meat thermometer and use times only as an approximate guideline.
· Let the roast rest under a loose tin foil cover on a serving platter for 20 minutes before carving
