Beer Can Chicken

INGREDIENTS:
· 1 whole chicken 3 ½ to 4 lbs
· 2 TBS olive or vegetable oil
· 2 TBS salt (we like course flake kosher salt)
· 3 TBS dry rub ( we have pre-portioned packs of our favorite rub for $2)
· 1 can of beer half full…enjoy the first half while the grill is heating up!
DIRECTIONS:
· Rub the chicken with oil
· Rub chicken inside and out with mixture of salt, pepper, and dry rub
· Place the half-full beer on a solid surface and lower the chicken onto the can, positioning the can inside the cavity of the chicken
· Transfer to the grill, balancing between the legs of the chicken and the can like a tripod
· Roast on medium-high heat for about 1 hour 15 min, or until the thickest part of the thigh registers 180 degrees and the juices are running clear
· Let the chicken rest for 10 minutes before carving
